Salad Series.
What a great time to start our Gray’s Farms Salad Series.
While in the house prepping meals there is no better way to build up our immunity than with fresh vegetables.
Just a little background, having been a home care provider for over a decade. My goal was to provide the best healing foods I could for my daughter, and keep our health to its optimum, despite the emotional stress. Striving to keep as healthy as I could to care for her and providing nutrition for her maximized healing, all while hoping to offset the unhealthier foods her Dad and her would eat on the sly.
Part of this program was a jam-packed salad for lunch each day. Which let’s face it can be boring if one is not resourceful. But now it’s just part of our family meal, a lifestyle. The largest obstacle is time and clean up, but I have my system going, with commitment so will you.
We don’t want to overwhelm you with our salad secrets, each week we will add a couple recipes and hints to encourage and help you along the journey.
We will try to keep it seasonal, citrus recipes will be in abundance.
We hope you will use these recipes, they are a true act of love for you and your family. There will soon be more recipes posted, but I need to complete my morning salads. My counter is full of vegies waiting to be used and put up before the family wakes up.

Salads are Like a Raw Casserole
Remember salads are like casseroles in the raw, use the basic ingredients for the recipe, you might have more of one ingredient, less of another. Or you might not have one ingredient, really not everyone has access to Lemon Thyme. Do not let that stop you from creating your own custom salad. Or you might not even like one ingredient, don’t add it. You will find in our recipes we don’t use onions or garlic frequently, if you love those two items toss them in your creations.
Lemon Thyme/Jicama/Orange Splendor
Ingredients (quantities vary depending on size of produce on hand)
1-Jicama- cut in bite size pieces
4-oranges- skin and white parts removed cut in bite size pieces
1 Tablespoon Lemon-Thyme leaves-removed from stem
2 Tablespoons Olive Oil
½+ Tablespoon white vinegar (the + is depending on your tart desire
Sweetener-we use Stevia just a tad, but regular sugar will work—1 teaspoon)
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
1/4 teaspoon Trader Joe’s Chile Lime blend (purely optional, if you don’t have this you can squeeze a little lime and add ¼ teaspoon Chile powder.
Combine all ingredients.
Place in refrigerator. The salad will last at least 3 days, flavors mingle if made ahead of time.
